Spuds on the Greenway

The potatoes were too big to get pulled up with the roots and instead were found in the soil.

We did a very cool thing – we turned 1 pound of potatoes into 17 pounds of potatoes–all we had to do was a little research.  We only watered a handful of times and mulched once.  The sun and the spuds did the rest of the work.  This afternoon we’ll divide the potatoes and make plans for their futures.  Some will be turned into potato salad, others will be baked and eaten with sour cream and chives (also from our garden) and yet others will be donated to our wonderful partner, Lovin’ Spoonfuls.  It was quite possibly the most satisfying gardening experience we’ve had so far–finding so many surprises in the soil.
